Corn Salad

A delightful, colorful corn salad recipe you can make-a-head. 






































  • 1 can of whole kernel corn, drained
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped green bell pepper
  • 2 tablespoons chopped purple onion
  • 2 ounces sharp cheddar cheese, cubed the size of corn kernels
  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise

Mix all ingredients together.
Chill until ready to serve.

Ham and Cheese Frittata

A low carb recipe to start your morning with.







































  • 6 eggs
  • 2 tablespoons milk
  • 1/2 cup ham, finely chopped
  • 2 ounces sharp cheddar cheese, shredded
  • 2 green onions, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Beat eggs with milk until well mixed.
Add remaining ingredients, mixing well.
Pour into greased muffin tins.
Bake in preheated 350-degree oven for 20 minutes or until eggs are done.

Seasoned Black-eyed Peas



A New Year's tradition to bring luck in the coming year.








   

  • 1 pound dried black-eyed peas
  • water
  • 2 tablespoons rendered bacon fat
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon crushed red pepper 

Wash, sort and cover peas with water and soak overnight.
Drain and rinse peas.
In a large saucepan add bacon fat and onion.
Cook onion until translucent. 
Add peas and enough water to cover the contents with two inches to spare.
Season with salt and pepper.
Bring to a boil.
Lower heat and simmer 50 to 60 minutes.

Sloppy Joes

A quick and easy weeknight meal recipe.







































  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup ketchup
  • 1 tablespoon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup water
  • salt and pepper to taste
  • 4 teaspoons mayonnaise
  • 6 hamburger buns

Brown ground meat, drain.
Add onion, cook until translucent
Add ketchup, mustard and water.
Bring to a boil, simmering 15-minutes.
Stir in mayonnaise
Toast buns.
Serve meat on buns.

Parmesan Bacon Crisp

An old favorite to ring in the new year.






































  • 1/2 cup grated Parmesan cheese
  • 1 sleeve club crackers
  • 12 ounces bacon, slices cut in half

Top each cracker with one teaspoon of cheese
Wrap each cracker with 1/2 slice of bacon
Place on rack on cookie sheet.
Bake in preheated 250-degree oven for 2 hours or until bacon is done.
Serve warm or at room temperature.

Brownie Cookies

Easy brownie cookie recipe.






































  • 3/4 cup vegetable oil
  • 2 cups sugar
  • 2/3 cups cocoa powder
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 cup walnuts

Mix oil, sugar, and cocoa powder together.
Add eggs one at a time, mixing after each addition.
Add vanilla extract.
Mix flour and baking powder together.
Add flour mixture gradually to batter.
Fold in nuts.
Chill dough.
Roll dough into 1-inch balls.
Bake in preheated 350-degree oven for 8 minutes.


Tips:
This batter is very wet, but it will thicken.  If you need to speed things up place in freezer.

Oyster Cracker Snack

Oyster crackers have been made in New England since 1828 by the Westminster Cracker Company.  They are traditional served with oyster stew and clam chowder, but with a few ingredients you can transform them into a easy snack to enjoy with a glass of wine.









  • 3/4 cup vegetable oil
  • 1 package dry ranch dressing mix
  • 1 teaspoon dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon-pepper seasoning
  • 2 10-ounce packages oyster crackers

Mix together oil, ranch dressing, dill, onion powder. garlic powder and lemon pepper.
Pour over oyster crackers.
Toss to coat.
Place on ungreased cookie sheet.
Bake in preheated 250-drgree oven for 20 minutes.
Cool.
Store in air tight container.
Makes 12 cups
